Ingredients

1 cup unsalted butter, softened

¾ cup Granulated Sugar
¾ cups Light Brown Sugar
2 egg

¼ cup finely ground freeze-dried strawberries
red or pink liquid food coloring
2 ⅔ cups all-purpose flour
1 teaspoon baking soda

½ teaspoon salt
1 pack sugar-free strawberry Jello Mix


Crumb Topping:
5 Voortman's sugar-free shortbread cookies or graham crackers
1 pack of sugar-free strawberry Jello Mix
White Chocolate Drizzle:
White Chocolate Chips
Crisco

Directions

i.     Crush shortbread or graham crackers into a bowl
ii.    Mix in sugar-free strawberry Jello powder and melted butter then stir 
iii.   Preheat oven to 350°F
iv.    Cream together butter and both sugars
v.     Add eggs, one at a time
vi.    Add in sugar-free strawberry Jellow Powder
vii.   Crush up freeze dried strawberries and add to the mix
viii.  Add red or pink food coloring to desired color. Red dye 40 the good stuff
ix.    In a separate large bowl, whisk together flour, baking soda, and salt
x.     Slowly add the flour mixture to the batter, mix until combined
xi.    Roll out dough and bake for 8 minutes
xii.   Remove from the oven and sprinkle the crushed cookie-Jello mix on top of the cookies
xiii.  Return to oven and bake for another 4 minutes
xiv.  Remove cookies from oven and let cool completely. Chill in refridgerator
xv.   Melt white chocolate chips with crisco in the microwave 1 minute and then stop and mix then back in the microwave for 30 seconds (I do not measure the amound of chocolcate chips maybe 1/2 cup and 1 tbsp of Crisco)
xvi.  Drizzle over chilled cookies
