Ingredients
1 cup unsalted butter, softened
¾ cup granulated sugar
¾ cup light brown sugar, packed
2 eggs
2 ⅔ cups flour
1 tsp baking soda
½ tsp baking powder
1 pack sugar-free lime Jello mix
1 lime
1 tsp citric acid to taste
1 tsp salt
1 cup white chocolate, chopped. I used Lindt
1 cup of crushed Graham crackers
1+ cup of powdered sugar, for rolling

Directions
i. Preheat oven to 350 degrees F.
ii. In a medium bowl mix flour, baking soda, baking powder, Jello mix, citric acid, salt and set aside
iii. Mix together butter and sugars on high until combined, should be fluffy
iv. Beat in eggs and lime juice
v. Mix in the dry ingredients to combine
vi. Add chocolate, graham crackers, and lime zest, mix well
vii. Roll dough into balls then roll in powdered sugar. Place them evenly spaced on parchment paper
viii. Bake approximately 10-12 minutes
ix. Let them sit on the pan for 3 minutes and then transfer to cooling rack
