Ingredients
2 sticks butter
2 ¼ cups light brown sugar packed
2 ¼ cups rolled oats
1 tsp vanilla extract
1 egg
1 tsp salt
2 tbsp flour (if you want these to be thin like actual Florentines then use 3 tsp of flour only)
Caramel chocolate chips
Semi-sweet chocolate chips

Directions
i. Preheat oven to 375°F. Line cookie sheets with parchment paper.
ii. In a small saucepan over medium heat, brown butter until it smells nutty.
iii. In a mixing bowl or mixer, combine brown sugar, oats, egg and vanilla. Gradually add brown butter. Mix until combined.
iv. Stir in salt and flour.
v. Using a tablespoon, drop around 2 tablespoon scoops of dough onto parchment paper lined cookie sheet; these will spread so leave space
vi. Allow cookies to cool on the baking sheet for approximately 5 minutes then chill in fridge
vii. Melt both chocolates in separate bowls and then drizzle over the cookies
