Ingredients
1 cup unsalted butter, softened (microwave it for 20 seconds if refrigerated)
¾ cup cocoa powder (The Saco Pantry premium cocoa) + a splash of milk if batter is too thick
1 cup granulated sugar
½ cup light brown sugar, packed
½ dark brown sugar, packed
2 tsp Café Bustelo instant coffee
2 large eggs
3 cups flour
1 tsp baking soda
½ tsp baking powder
1 tsp salt
2 cups chocolate chips (Hershey's semi-sweet)

Directions
1. Preheat oven to 375 degrees F.
2. In a medium bowl mix flour, baking soda, baking powder, cocoa powder and salt. Set aside.
3. Mix together butter and sugars on high until combined, should be fluffy
4. Beat in eggs and instant coffee
5. Mix in the dry ingredients to combine. Add a splash of milk if the dough seems too dry
6. Add chocolate chips and mix well
7. Roll dough into balls and place them evenly spaced on parchment paper
8. Bake approximately 8-10 minutes. Depends on your oven though. If you have a cheap apartment oven like me then you might find that the internal temperature is running 75 degrees hotter than it reads. lol...
9. Let them sit on the pan for 3 minutes and then transfer to cooling rack
