Ingredients
1 box carrot cake mix
2 eggs
¼ cup vegetable oil
1 ½ cup white chocolate chips
¼ cup chopped mixed nuts (Almond, hazelnut, walnut, pecan)
¼ cup walnuts
Powdered sugar
1 cup Hershey’s Semi-sweet chocolate chips (you can use white chocolate if you want; my Great Grandma made carrot cake with chocolate frosting though, so this is just a little shout out to her)
Crisco to melt chocolate
Directions
i. Mix the carrot cake mix, eggs, and vegetable oil together
ii. Stir in the chopped mixed nuts, and white chocolate chips.
iii. If your dough is too wet you can add a little flour, not more than ¼ cup though
iv. Freeze the dough for 30 minutes
v. Roll the dough in powdered sugar. The dough is very sticky and annoying, so it has to come from the freezer
vi. Bake at 350 for 10 minutes
vii. Let set for 10 minutes
viii. Chill in fridge for 10 minutes
ix. Melt the Hershey’s semi-sweet chocolate chips with Crisco in the microwave (stirring every 30 seconds until it is smooth, if you don’t do this you’ll burn your chocolate, might even catch fire a little, idk, that never happened to me though, I wouldn’t know if this is true or not, haha, no never happened to me, not me, no, haha)
x. Drizzle the chocolate over your cookies and then crumble the remaining walnuts over top.
