
Ingredients
1 cup unsalted butter, softened (microwave it for 20 seconds if refrigerated)
1 cup granulated sugar
1 cup light brown sugar, packed
1 tbsp vanilla extract
3 large egg whites (from an egg can’t be from a carton)
3 cups flour
1 tsp baking soda
½ tsp baking powder
1 tsp table salt or sea salt
½ pack of sugar free cheesecake pudding mix
2 cups mini M&Ms

Directions
i. Preheat oven to 375 degrees F
ii. In a medium bowl mix flour, baking soda, baking powder, and salt. Set aside
iii. Mix together butter and sugars on high until combined, should be fluffy
iv. Beat in egg whites and vanilla
v. Mix in the dry ingredients to combine
vi. Add mini M&Ms and fold in so they don’t crack too much
vii. Roll dough into balls and place them evenly spaced on parchment paper
viii. Bake for approximately 8-10 minutes. Take them out when they look very slightly brown on top. They will continue to cook when you remove them so don’t overbake
ix. Let them sit on the pan for 3 minutes and then transfer to the cooling rack
